Cooking for One: Peach Crisp

I'm taking a break from writing my daily schemes to give you a recipe for one. This is simple. Easy. Quick Prep. The only thing you have to wait for it the oven. Here it is. Peach Crisp. I'll eat the cobbler cake mix w/melted butter over it in the dutch oven when someone makes it for me, but this is an alternative to make something small when you crave it and it is made for just one person! Enjoy!

Peach Crisp Ala the Develle
Step One. Pick a Peach.
Step Two. Peel the peach.

Step Three. Slice & dice the peach into bite size chunks.

Step 4. Put peach into individual sized ramekin. Just One = One Serving.
Step 5. Sprinkle peaches w/your favorite blend of cinnamon & sugar (3part Sugar 1part Cinnamon is my fave) to your liking...not too heavy, not too light.....
Step 7. Now in my ode to Paula, you can add some butter, i did about 1/2 teaspoon
(I know not a true ode to Paula, she would put 3 tablespoons)
Note: this is not even necessary, but to help the Cin&sug blend w/peaches, it helps....
Step 8. This is where planning/pre-prepping comes in that I did not warn you about. Whoops.
If you are a nerd like me & get a craving for cookies, you make a batch, bake a few & freeze the rest in individual sized cookie balls so when ever you get the craving, you can pop one in your toaster oven. This is the time for when you pull one of those Oatmeal Cookie Balls out of the freezer and put one....or maybe two on top of your peach concoction. (or make the from scratch, or gulp buy a premade dough from the store, cough cough). I put two on top...I'm a sucker for cookies.....
Step 9. Bake it in your toaster oven so you don't heat up the house w/the big oven at 350 degrees for 20 minutes or until the cookies have nicely baked on top, not soggy, not burned. I just put my smellers on for a real timer -- when it smells done, it is done.

Step 10. Eat. Enjoy. Savor the flavor. This is what it looks like done. About to be dug into. Dug into. And finished off. Delicious! Enjoy!
